This rich local taste is not only popular in Taiwan. People love it, and even foreign tourists praise it. National Geographic magazine praised Taiwan’s food as a mecca for gourmets. Braised pork rice, a delicacy that is common throughout Taiwan, originated from the hardships of people's livelihood in the early days of Taiwan. Most people only had the opportunity to eat meat during the New Year and festivals, and when they worshiped their ancestors and gods. However, my mother-in-law, who was living in a tight life, used her ingenuity to buy scattered pork rinds from the butcher stall owner. When she returned home, she added soy sauce, onions, and garlic and stir-fried them together to make a pot of braised pork to mix with rice.
